Moong dal crepes with veggies

Yields: Approximately 6 chillas (serves 2-3 people)

Prep time: 3-4 hours (for soaking) + 15 minutes

Cook time: 20 minutes

Ingredients:

  • 1 cup yellow moong dal (split yellow lentils), soaked for 3-4 hours
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper (capsicum)
  • 2 tablespoons chopped fresh coriander (dhania) leaves
  • 1 tablespoon curd (yogurt)
  • 1 green chili, finely chopped (adjust to taste)
  • 1 teaspoon grated ginger
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (optional)
  • 1/4 teaspoon cumin seeds
  • Salt to taste
  • Oil for cooking

Instructions:

  1. Drain and grind: Drain the soaked moong dal and grind it into a smooth paste, adding water as needed.
  2. Mix batter: In a bowl, combine the ground moong dal paste with the onion, bell pepper, coriander, curd, green chili, ginger, turmeric powder, red chili powder (if using), cumin seeds, and salt. Mix well to form a smooth batter. If the batter is too thick, add a little water to adjust the consistency.
  3. Heat a pan: Heat a non-stick pan or griddle over medium heat.
  4. Cook chillas: Pour a ladleful of batter onto the hot pan and spread it into a thin circle. Drizzle a little oil around the edges.
  5. Flip and cook: When the edges start to brown and the top surface looks cooked, carefully flip the chilla and cook on the other side until golden brown.
  6. Serve: Repeat with the remaining batter. Serve the moong dal chillas hot with additional curd, chutney, or your favorite dipping sauce.
