Oats Khichdi Recipe

Cook Time: 20-25 minutes (Stovetop) or 5 minutes (Instant Pot)

Ingredients:

  • 1 cup rolled oats (or quick-cooking oats)
  • 1/2 cup moong dal (split yellow lentils)
  • 3 cups water (or vegetable broth for added flavor)
  • 1 tablespoon oil or ghee
  • 1 teaspoon cumin seeds
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (optional, adjust to taste)
  • 1-inch piece ginger, grated
  • 1/4 cup mixed vegetables (carrots, peas, beans, corn, etc.)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional, adjust to taste)
  • 1 teaspoon garam masala (optional)
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions (Stovetop):

  1. Rinse: Rinse the oats and moong dal thoroughly until the water runs clear.
  2. Sauté: Heat oil or ghee in a pot. Add cumin seeds and let them splutter. Add onion, green chili, and ginger. Sauté until the onion softens.
  3. Add Remaining Ingredients: Add the rinsed oats, moong dal, mixed vegetables, turmeric powder, red chili powder (if using), garam masala (if using), and salt.
  4. Add Water and Cook: Pour in the water (or vegetable broth). Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the oats and dal are cooked through and the khichdi has thickened.
  5. Garnish and Serve: Garnish with chopped cilantro and serve hot.

Instructions (Instant Pot):

  1. Sauté: Press the “Sauté” function on your Instant Pot. Add oil or ghee, then cumin seeds, onion, green chili, and ginger. Sauté until the onion softens.
  2. Add Remaining Ingredients: Add the rinsed oats, moong dal, mixed vegetables, turmeric powder, red chili powder (if using), garam masala (if using), salt, and water (or vegetable broth).
  3. Pressure Cook: Secure the lid and set the valve to “Sealing.” Cook on high pressure for 5 minutes, then allow for a 5-minute natural pressure release.
  4. Release Pressure: Manually release any remaining pressure.
  5. Garnish and Serve: Fluff the khichdi with a fork, garnish with chopped cilantro, and serve hot.
