Sprouted moong crepes

Ingredients:
- 1 cup sprouted green moong beans (mung beans)
- 1/2 cup besan (chickpea flour)
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped tomato
- 1/4 cup finely chopped mixed vegetables (carrots, bell peppers, zucchini, etc.)
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 tablespoon chopped coriander (cilantro) leaves
- 1/2 teaspoon grated ginger
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder (optional)
- Salt to taste
- Oil or ghee for cooking
Instructions:
- Grind sprouts: In a blender, grind the sprouted moong beans with a little water into a coarse paste.
- Mix batter: In a mixing bowl, combine the ground moong bean paste with besan, chopped onion, tomato, mixed vegetables, green chilies, coriander leaves, ginger, turmeric powder, red chili powder (if using), and salt. Mix well to form a smooth batter. If the batter is too thick, add a little water to adjust the consistency.
- Heat a pan: Heat a non-stick pan or griddle over medium heat.
- Cook chillas: Pour a ladleful of batter onto the hot pan and spread it into a thin circle. Drizzle a little oil or ghee around the edges.
- Flip and cook: Cook until the edges start to brown and the top surface looks cooked, then carefully flip and cook the other side until golden brown.
- Serve: Repeat with the remaining batter. Serve the moong dal chillas hot with yogurt, chutney, or your favorite dipping sauce.
