Whole masoor dal crepe with veggies

Ingredients:

  • 1 cup whole masoor dal (red lentils), soaked for 8 hours or overnight
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped tomato
  • 1/4 cup grated carrot
  • 1/4 cup chopped spinach
  • 1/4 cup chopped cilantro (optional)
  • 1 green chili, finely chopped (adjust to taste)
  • 1 inch piece ginger, grated
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • Oil or ghee for cooking

Instructions:

  1. Drain and grind: Drain the soaked masoor dal and grind it into a coarse paste using a food processor or blender. Add water as needed for a thick batter consistency.
  2. Mix batter: Transfer the batter to a bowl and add the chopped onion, tomato, carrot, spinach, cilantro (if using), green chili, ginger, cumin seeds, turmeric powder, salt, and pepper. Mix well.
  3. Heat a pan: Heat a non-stick pan or griddle over medium heat.
  4. Cook pancakes: Pour a ladleful of batter onto the hot pan and spread it into a thin circle. Drizzle a little oil or ghee around the edges.
  5. Flip and cook: Cook until the edges start to brown and the top surface looks cooked, then carefully flip and cook the other side until golden brown.
  6. Serve: Repeat with the remaining batter. Serve the masoor dal pancakes warm with yogurt, chutney, or a side salad.
